Chocolate Brownie and Mega Mango the top sellers

“Biebereis, Biebereis …” cry the children as soon as they see the ice-cream bike with his yellow-and-white umbrella. Everyone in Weimar now knows Felix Bieber, and his reputation has long spread beyond the city’s borders.

And it’s no wonder. He’s present at every festival, market and fair – including now in Jena and Erfurt. He created ice-cream for the first time in his shared accommodation at the Bauhaus University, where he was studying media art, in 2013. It was his second semester, and he was part of the uni’s annual “summaery” exhibition with his imaginary ice-cream parlour. “Food is my thing – more than videos, pictures or radio items”, he confesses. He continued to develop the idea with the help of many friends, who designed the logo – a beaver, of course (Bieber means “beaver” in German) – and assisted with various other aspects too.

Today, Felix has his own shop – a mix of factory and improvised café with ice-cream machine and giant freezer which holds 6,000 ice-creams. This is where all the ice-cream is produced, and where it is sold in self-rolled waffle cones on weekends. The range now spans 50 varieties, including flavours such as Mulled Wine (NB: contains alcohol), Vanilla Cookie and Watermelon & Mint. But the top sellers have for many years been Chocolate Brownie and Mega Mango. The ice-creams are sold all year round – outside during the summer months, and indoors during the winter – including at corporate events. Biebereis is always open and on everyone’s lips.

Bieber has now also welcomed a partner, Brazilian Flávia Carvalho, who gave up her position as a pastry chef at Michelin-Star-restaurant Anna Amalia to sell her macaroons, cakes and desserts under the trade name of O Fruto. Felix Bieber believes it complements his business perfectly.
